Applications of the testo 270

During frying, a series of chemical reactions occur in the oil, including oxidation, polymerization, and hydrolysis, which directly affect fat quality. The quality of the fried product depends on the oil used, making monitoring essential.

Fat molecules consist of glycerol and three fatty acids. During frying, the fatty acids separate from glycerol through chemical reactions, forming breakdown products such as aldehydes and ketones. These are measured as Total Polar Materials (TPM). The TPM percentage affects not only oil consistency, taste, and appearance but also its suitability for frying.

The testo 270 quickly and reliably determines oil quality by measuring TPM and presenting the result as a percentage. Old oil shows elevated TPM values. Using such oil results in lower-quality fried products and potential health hazards.
